Cut the onion in quarter size and place it on the grill with apple or maple wood chips for at least an hour or so. The onion should be on the grill until it turns light brown or golden.

Once the onion is smoked, let it cool down for a while before you chop it down into bite-sized pieces. Afterward, sauté it on a saucepan with ¼th a cup of oil and ½ a teaspoon of salt over low-medium heat. Let it sit on the pan for about 10 minutes.

Once the onions start to caramelize, add in the minced garlic and let it cook together for another minute or so.

Afterward, add in the chopped tomatoes and rest of the items (minus the acid and sorghum) over low heat and stir around occasionally for the next 30 minutes.
